About us
Our history
Our story dates back to the streets of Kent, London in the 1800s when chocolatier William (Billy) Blue was tried and convicted of theft and sent to the shores of Sydney. Making waves from the start, Billy quickly befriended Governor Macquarie, was appointed Harbour Watchmen and from there started the famous Sydney Ferry service we all know and love.
His legacy lives on today as the namesake for Sydney streets and reserves, magazines and design agencies. With entrepreneurs Ross Renwick and Aaron Kaplan opening Billy Blue School of Graphic Art in 1980 which later became the inspiration for a partner school, William Blue College of Hospitality Management opening its doors in 1990. A leader in hospitality and hotel management education William Blue set out to change the industry as we know it with highly skilled, specialised and hungry graduates. Just like Billy, William Blue began making connections right away - capturing the attention of international hotel chains, hospitality brands and franchises hiring students even before they graduate.
Hospitality can’t be taught in textbooks and lecturers, and students often need real-world experience before they graduate. With this in mind, we started the next chapter of our journey: William Blue Dining. Opened in 2015 William Blue Dining is a student-led fine dining restaurant opened to the public in the iconic location of The Rocks, Sydney. Billy Blue’s former stomping-ground. The restaurant has gone on to be a multi-award winning culinary experience ranked in the Top 20 restaurants in Sydney (TripAdvisor).
2016 welcomed a major change for William Blue College of Hospitality Management, formally becoming part of Torrens University Australia and the only University in Australia to offer tertiary qualifications in culinary. Today, William Blue exists as a chapter in the heritage of the Torrens University Australia story. Our ethos, drive and legacy remain the same: giving graduates the opportunity to find a career they love.
Although a lot has changed since 1801 Billy’s entrepreneurial spirit has been woven into the fabric of not only Sydney’s history, but the world’s, with close to 4,000 William Blue graduates making greater waves and changing the hospitality industry as we know it.
