Stuffed tomato filled with roasted pine nuts, puffed rice and barley served with a basil infused tomato water (Vegan, GF available on request)

Citrus cured kingfish ceviche young coconut and lemongrass served with infused cream, cucumber, chili and kaffir lime (Dairy Free, Gluten Free)

Maple glazed pork belly with vanilla bean parsnip puree and micro herb salad (Gluten Free)

Raviolo of Caribbean curried oxtail, with kumera foam, sautéed baby spinach, crisp curry leaves and fava (Dairy Free)

Jamaican jerk spatchcock, with black bean ham hock braise, collard greens and a light cilantro jus (Dairy Free, Gluten Free)

Black garlic risotto, with wild forest mushrooms and truffle oil (Vegan, Gluten Free)
