What is study abroad for International Hotel Management?

Learn alongside our students in the Bachelor of Business in International Hotel and Resort Management and learn about the Australian approach to hotel management.

This course provides extensive practical learning in a simulated hotel environment at our residential campus, complemented by significant networking opportunities with leading Australian hotel brands.

You’ll live at our Leura campus in the Blue Mountains for two three-month periods, fully immersed in all aspects of hotel operations. Additionally, you will undertake 600 hours of paid industry work placement in either the first or second-year enrolment. In the 3rd year enrolment you will spend six months focusing on business management at our Sydney campus.

Business Academic Skills | BUS106BM

This subject introduces the skills needed to learn effectively in a business context. Topics covered include communication, information skills, reflection, critical thinking and analysis. Support will be provided over the course of the subject to help you gradually acquire the necessary skills for academic and professional development. You will be exposed to a wide range of business texts, scenarios, and environments, allowing you to develop your capacity to learn, think critically, communicate effectively, and act professionally.

The rapidly changing nature of work demands a set of personal skills to remain professionally competitive and resilient. Food and Beverage Cost Control | HTL103BM

This subject is a practically oriented subject focused on developing knowledge of current food and beverage control practices in a hotel and resort restaurant context. Through applied training, augmented reality and theoretical classes, you will improve your awareness of kitchen and restaurant management including hygiene, work safe practices, ordering and stock control, budgets and rostering. During theory classes you will learn how to analyse a menu in order to manage revenue and cost control with a legal and sustainable focus.

Introduction to the Accommodation Sector | HTL104BM

In this subject you will gain knowledge and awareness about the history, nature, size and scope of the global tourism industry, with particular focus on the accommodation sector. Learn about the diversity of the accommodation sector, ownership models, hotel departments and operational structures. In addition, you will use immersive technology to understand hotel facilities. The subject will also focus on contemporary issues and trends that shape the development of the sector.

Guest Experience and Service Management | HOS103BM

To remain competitive, the accommodation sector needs to understand what their guests want and how to deliver a quality guest experience (rational and emotional) that goes beyond the product or service offering. You will be introduced to key concepts associated with managing service experiences in a highly competitive global accommodation sector. You will examine and apply ways to improve guest experiences and create positive emotions in guests. Additionally, you will analyse customer journey mapping techniques, strategies to manage and co-create guest experiences and metrics of quality, satisfaction, and loyalty.

Financial Operations | BUS108BM

This subject prepares you to become a “people person who loves numbers and a numbers person who loves people”. You will be introduced to the language of money in real-world settings to help make better business decisions as future leaders in the accommodation sector. This subject has a practical approach, providing you with opportunities to make better business decisions through an understanding of financial performance and financial position. You will examine accommodation industry relevant financial leadership functions, such as financial statement analysis, budgeting, cost-volume-profit and sustainable performance evaluation.

This subject introduces you to the Meetings, Incentives, Conferences, Exhibitions (MICE) sector. You will gain an appreciation of the size, scope and importance of key business events that may be hosted by hotels or resorts, and are a major source of revenue for catering, meetings and accommodation in hotels and resorts. You will analyse planning requirements for MICE, how to pitch for MICE business, and the impact of technology on MICE with an appreciation of sustainable outcomes.

This is a practical based subject that introduces you to food and beverage operations appropriate to the accommodation sector. Through a series of workshops, you will gain experience and practice your skills in readiness for your placement in a range of food and beverage outlets. The key focus of this subject is to broaden your understanding of the operational aspects of food and beverage service, whilst giving you the opportunity to develop and apply theories, concepts and skills in a practical environment.

Industry Placement I Part A | IPA101BM

Employment is an excellent opportunity for the student to develop knowledge, skills and abilities. The aim of Industry Placement is to introduce students to the work environment external from the school. Students are first prepared for Industry Placement by attending workshops on the preparation of recruitment and selection documentation and practice their interview skills (IPA201). Whilst on placement students are provided with opportunities to develop their career pathway and enhance their operational skills and knowledge. This subject further provides the opportunity for students to reflect upon the relationship between their academic studies and the workplace environment. Employment in to be undertaken at an approved facility within their chosen discipline (hotel, restaurant, event, hospitality environment).

Industry Placement I Part B | IPB101BM

Industry Placement is a critical component of the Bachelor of Business International Hotel and Resort Management (BBUSIHRM) program. It is designed to expose you to a position within the hotel/hospitality industry. IPB101BM is the continuation of your IPA101BM Industry Placement with your approved employer. In this portion of your Industry Placement, you will further enhance industry skills and reflect on your personal and professional growth. Building on your experience in IPA101BM Industry Placement, you will now reflect on the SmartSkills needed to develop your career pathway. This subject further provides the opportunity for you to reflect upon the relationship between your learning experience and the workplace environment. The learning outcomes achieved at the completion of IPA101BM and IPB101BM will contribute towards supporting the theories and concepts delivered during your second-year subjects.

This subject introduces you to the basic principles of State and Commonwealth laws relating to tourism and hospitality industry, with international comparisons. Emphasis is placed on areas such as liability, risk identification and mitigation, resolution and legal problem solving. This subject provides a comprehensive introduction and overview of the theory and practice of Talent Management. You will discuss how Talent Management has become aligned with developing an organisational and workplace culture, goals and business competitiveness. Embarking on research is important for the justification of decision making in any business environment. This subject will develop your research practice skills to engage with relevant business stakeholders to make informed and beneficial business decisions. You will explore how primary and secondary research can be applied to address contemporary issues affecting the hospitality and tourism industry. A core component of the subject is the evaluation of research strategies used in the hospitality and tourism industry. Housekeeping is a key department in an accommodation facility. You will develop practical skills combined with theoretical knowledge of financial and managerial responsibilities to enable you to operate accommodation services successfully. This subject is a combination of both practical (applied) and theoretical learning. Classes will be delivered in online workshops or in hands on classes. You will demonstrate your Housekeeping Department skills and knowledge within the practicum laboratory or within a simulated environment.

This subject will equip you with the distinction between sales and marketing in a hotel and resort environment. Learning will be covered in key principles of sales and marketing including consumer decision-making principles, segmentation, pricing structures and distribution channels. Rooms Division 2 - Front Office | HTL204BM

Rooms Division 2: Front Office is a key contributor within any accommodation facility. Therefore, a thorough understanding of guests’ expectations and service delivery, to meet all levels of service, is of the utmost importance to ensuring business success while exceeding guest expectations. The subject engages you in all positions within Front Office and will further develop your understanding and application of interdepartmental relationships. You will obtain a thorough working knowledge of a Property Management System.

The subject incorporates knowledge of Front Office operations, financial and managerial responsibilities and customer service soft skills, including how to address guests’ complaints. You will be exploring how to use emotional intelligence (Smart Skills) to deliver an outstanding guest experience. Classes will be delivered in workshops and theory classes. You will demonstrate your Front Office Department skills and knowledge within the practicum laboratory or within a simulated environment.

Environmental Sustainability for Hotels and Resorts | HTL205BM

The need to consider sustainability in the tourism and hospitality industry is a global policy priority with an urgent response required from the sector. However, the challenge for hotels and resorts is to balance stakeholders’ sustainability expectations with traditional business performance indicators.

This subject has been designed to equip you with the tools to practically adapt and apply sustainability principles to a range of current and emerging social and environmental challenges that confront the tourism and hospitality industry more broadly, while maintaining a particular focus on the hotel and resort sector.

You will explore the hotel and resort sector beyond its commercial role in the economy by investigating its potential to utilise frameworks and strategies to achieve pro-social and pro-environmental behaviour change to enable sustained positive outcomes for business, government and the community.

This is the second part of the second placement within a Food and Beverage, or Rooms Division context in the hospitality environment across two consecutive terms (IPA201BM-IPB201BM). Whilst on placement you are provided with opportunities to develop your career pathway and enhance your operational skills and knowledge in Rooms Division or Food and Beverage. This subject further provides the opportunity for you to reflect upon the relationship between your academic studies and the workplace environment. Combine professional experience with your qualifications while undertaking an industry placement of 600 hours in total over two terms.

Strategic planning is an organisation’s process of defining its strategy or direction and making decisions on allocating its resources accordingly. You will examine the total enterprise, the industry, and the competitive environment in which it operates. The emphasis is on further developing and fine-tuning your critical thinking and decision-making skills to formulate strategic planning by reviewing a number of case studies.
Hoteliers and Destination Management | HTL304BM

Hotels and resorts do not operate in a vacuum. They are situated in a specific destination. They may be located in a city or rural region, on an island, a wealthy or developing economy. This subject integrates learnings from your study thus far into a sophisticated understanding of your role as a hotelier within a destination. How do you collaborate with other hospitality service providers, government organisations and the community to ensure ethical operations, with local backward linkages, respect for local culture and inclusion in the workforce, as well as to protect and enhance the local environment? Sustainability considerations for people, place and profit are explored, utilising multiple case studies and with reference to the United Nations Sustainability Development Goals (SDGs).

Hotel and Resort Design looks at the feasibility process in relation to concept development, planning and design for accommodation. The subject considers design from inception to completion, sustainable design practices and the impact of design on all aspects of the operation’s management. In the first 5 weeks you will consider feasibility, then move into facilities.
Entrepreneurship and Innovations | BUS307BM

In this subject, you will explore the foundations of entrepreneurship, value creation, and innovation while examining their impact on the hospitality industry. Working in small teams, you will develop and pitch a creative and feasible business case for investment or approval, using real-world strategies to stand out in a competitive marketplace. Ethics in Decision Making | BUS308BM

How do organisations make decisions that aim to minimise adverse impacts of their operations and maximise positive outcomes for their stakeholders? Reflecting on specific ethical theories and frameworks for decision making, you will consider the relevance of UN Sustainable Development Goals (SDGs), Corporate Social Responsibility (CSR), effective leadership, stakeholder engagement, and corporate governance. In this subject, you will learn to identify and explore opportunities for revenue optimisation in different departments of the hotel. The Leadership Experience | HOS301BM

This subject explores foundational leadership theories and addresses key issues relevant to hospitality leadership in today’s work environment. Drawing on contemporary cases from hotel and resort organisations, you will analyse how effective leaders motivate, engage, and navigate their teams through dynamic challenges. Emphasising the development of an appropriate leadership style, the subject examines the process of inspiring and influencing others while balancing organisational goals with stakeholder expectations. The subject highlights the need to understand multiple leadership styles for different work environments and the pivotal role leaders play in driving positive employee motivational change. You will be encouraged to view leadership in the 21st century as a force for progress both within and beyond organisational boundaries.
